Eat and Feel Great: 500 Calorie Dinners

Did you set any specific health or nutrition goals for the new year? If the answer is yes, have you been able to keep up with them? I wanted to  share a few tasty dinner recipes you can cook that are under 500 calories. Below are three featured recipes from Fitness Magazine. One of the best ways to stick with a diet or a change in eating habits is to realize that you can still enjoy the food you eat. I hope the recipes below will help!

 Recipe 1: Cilantro-Lime Shrimp Fajitas

You will need:

  • 1/2 cup sliced onions
  • cup sliced multicolor bell peppers
  • tablespoon olive oil
  • garlic clove, minced
  • teaspoon ground cumin
  • ounces precooked frozen shrimp, thawed
  • tablespoons chopped fresh cilantro
  • lime, juiced
  • whole-grain tortillas

Recipe 2: Lemon Basil Pasta with Summer Squash (or your favorite winter squash)

You will need:

  • ounces (2/3 cup) dry whole-wheat penne
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped yellow squash
  • 1/2 cup canned white beans, rinsed and drained
  • lemon, juiced
  • 1/4 cup chopped fresh basil
  • tablespoon Parmesan cheese
  • tablespoon olive oil

Recipe 3: Florentine Chicken & Goat Cheese Flatbread

 

You will need:
  • 3 cups baby spinach
  • 2 teaspoons olive oil
  • 1 garlic glove, minced
  • 1 whole-grain flatbread
  • 4 ounces rotisserie chicken, chopped (no skin)
  • 1 ounce goat cheese, crumbled
